Creamy cauliflower soup
What you need:
• 1 teaspoon oil
• 1 onion, chopped
• 2 garlics, chopped
• 1kg cauliflower, cut
• 1.5 litre vegetable stock (or more, I usually make 2 litres of this soup so I will adjust my stock according to this)
• 10g or more nutritional yeast
• Salt, Pepper
• 250 ml water
• 50g oats
How to make it:
1. Heat up an oil in the big soup pot, add onion and cook till tender (Add a splash of water to prevent ionion from burning if you need to). Add garlic and cook for another 30 seconds.
2. Add cauliflower, vegetable stock, salt, pepper and mix it well. Bring to the boil, then cook till your cauliflower is soft.
3. Put into your blender oats and water and let it sit til your cauliflower will be cooked.
4. Just before pouring your soup into the blender, first blend for 1 minute your oats in water. Then add to your blender soup and blend it till smooth.
5. Transfer your soup back to the pot, add nutritional yeast and mix it well. Cook for another 3 minutes.
6. Taste it and add more seasoning if you desire.
7. Enjoy
Notes:
Add more nutritional yeast for more “cheesy” flavour.
This soup makes around 4 portions so share it with your loved ones or store it in the fridge.
You can freeze leftover soup.
