Creamy veggie bean stew

What you need:

• 1 teaspoon oil

• 1 onion, chopped

• 3 garlics, grated

• 2 bell peppers, sliced (I used green bell peppers but any color goes well)

• 4 carrots, sliced

• Salt, pepper

• 3 tablespoons or more nutritional yeast

• 1 can (around 300g)  sweet corn

• 400g cooked white beans

• 500 ml homemade coconut milk

 

 

How to make it:

1. Cook your white beans ahead.

2. In a big pot heat up the oil. Add onion and cook till tender. (Add a splash of water to prevent the onion from burning if you need to). Add garlic and cook for another 30 seconds.

3. Add bell peppers, mix it well and sauté for few minutes.

4. Add carrots, salt and pepper, mix it well and cook for 5 minutes.

5. Add coconut milk and nutritional yeast, mix it well and cook till your vegetables are half tender approximately 15-20 minutes.

6. Add cooked white beans and sweetcorn and cook till your vegetable are tender.

7. Taste it, add more seasoning if desired.

8. Enjoy with brown rice, bulgur

 

Notes:

This dish make 3-4 portions so share it with your love ones.

You can freeze leftovers meal.

Buy your beans & legumes in a bulk shop (if available) or in the biggest possible packaging in order to reduce your waste. I always cook my beans/chickpeas in advance and I store them portioned in the freezer.
