Red kidney bean hummus
What you need:
• 1 teaspoon oil
• 1 small onion, chopped
• 1 cloves garlic, chopped
• 400g cooked red kidney beans
• Salt and pepper
• 2 tablespoon nutritional yeast
• 2 tablespoon lemon, squeezed (or more)
• water
How to make it:
1. Heat up the oil in the pan, add onion and cook till tender, add garlic and cook for another 30 seconds.
2. Meanwhile put into the food processor cooked kidney beans, nutritional yeast, lemon, salt, pepper and little bit of water to help it moving.
3. When your onion/garlic mixture is done, add it to the food processor as well.
4. Mix it till smooth.
5. Taste it and add more seasoning, lemon or nutritional yeast if you desire.
6. Enjoy
Notes:
Stores it in the fridge for at least 30 minutes before serving.
This recipe make 3-4 servings. You can share it with your loved ones or store it in the fridge in an airtide container.
You can freeze leftover dip.
Buy your beans & legumes in a bulk shop (if available) or in the biggest possible packaging in order to reduce your waste. I always cook my beans/chickpeas in advance and I store them portioned in the freezer.
