Spinach lasagna with tofu cheese

What you need:

For the spinach sauce:

• 5 bigger fresh tomatoes, cut

• 1 teaspoon oil

• 1 onion, chopped

• 2 garlics, grated

• 200 grams spinach, frozen or fresh

• 2 teaspoons or more dried basil

• 1 teaspoon or more oregano

• Salt, pepper

 

For pasta:

• Whole wheat lasagna pasta, uncooked

 

For the tofu cheese:

• 1 soft tofu around 400g, drained and cut into chunks

• 4 tablespoons or more nutritional yeast

• 2 tablespoons freshly squeezed lemon juice, plus more as needed (from about 1/2 lemon)

• Salt, pepper

• 1 teaspoon or more oregano

• 1 teaspoon or more dried basal

 

How to make it:

Start with tomato spinach sauce

1. In the pot heat up the oil, add onion and cook till tender. Add garlic and cook another 30 seconds.

2. Add tomatoes, all the seasoning and cook till your tomatoes start to fall apart.

3. Add spinach and mix it well.

4. Cook whole mixture on the low heat while you are preparing the tofu cheese.

 

Tofu cheese

1. Place tofu with the rest of the ingredients to the food processor or high speed blender and blend it till smooth consistency.

2. Taste the tofu cheese and add more seasoning if desired. When happy, transfer it into a bowl and put it aside

3. Now you can either leave your tomato spinach sauce how it is or put it to the blender and blend it till smooth. It is up to you.

4. Taste it and add more seasoning you you desire.

 

Assembling lasagna

1. Turn the oven on and preheat on 180 degrees Celsius while you are layering your lasagna.

2. In the baking lasagne dish (I used 26cm over 19cm which is 10inch over 7.5inch baking dish)

3. Layers from the bottom:

tomato spinach sauce

pasta

tofu cheese

pasta

tomato spinach sauce

pasta

tofu cheese

Carry on till you use all your mixtures and finish with tofu cheese on the top. Sprinkle fresh ground black pepper on top.

Bake it covered for 50 minutes on 180 degrees Celsius. After bake it for another 5 minutes uncovered for brownish colour on top.

Notes:

Lasagne are always best to eat fresh immediately from the oven.
