Pomegranate lentils
What you need:
- 1 teaspoon oil
- 1 onion, chopped
- 400g brown lentils, rinsed
- Salt, pepper
- Vegetable broth
- 6 tablespoons or more 100% pomegranate sauce
- 1 cup walnuts, grated
- Garnish with fresh pomegranate (optional)
How to make it:
- Heat up an oil in the pot, add onion and cook till tender. (Add splash of water to prevent the onion from burning)
- Add lentils, cover with vegetable broth (keep the lentils submerged adding more vegetable broth if you need to). Add salt and pepper and cook till lentils are tender.
- Mix in grated walnuts.
- Mix in pomegranate sauce.
- Taste it and add more seasoning or pomegranate sauce if you desire.
- Garnish with fresh pomegranate
Serve with mash potatoes or bulgur.
Notes:
This recipe makes 3 – 4 portions.
You can freeze the leftover meal.
Buy your beans & legumes in a bulk shop (if available) or in the biggest possible packaging in order to reduce your waste. I always cook my beans/chickpeas in advance and I store them portioned in the freezer.
